It Started in Belltown

In 2008, Al Calozzi set up a rogue street cart on a Belltown sidewalk — a rented propane grill, a beach umbrella to keep the rain off the steaks, and a simple bet that Seattle was missing the real thing. He fed the late-night bar crowd one hand-chopped cheesesteak at a time, and word got around fast.
He'd learned the craft young — a metal spatula in each hand at ten years old — and he brought every bit of that obsession to the grill in Seattle. This wasn't a franchise or a plan. It was one guy, a cart, and a city that lined up for more.
Word got around. The cart moved indoors at Belltown Billiards, then to Pioneer Square, then downtown — and finally found its home in Georgetown, a little shack near Boeing Field where the planes roar overhead and the line forms at lunch.
